Serpme Börek

Serpme Börek is one of the unique flavors of Antalya Cuisine. It is among the Geographical Indications Products with the Geographical Indication, which was registered in 2021 from the Turkish Patent and Trademark Office, and represents the region's cultural richness.
 
Serpme Börek, also known as 'Fitır Börek' among the people, is famous for its thin dough rolled by hand without using a rolling pin. Serpme Börek has been consumed fondly in these lands for more than a century. It is an indispensable local flavor frequently consumed in daily life and especially accompanied by breakfasts. It was served at weddings, holidays and mevlits in ancient times. For Serpme Börek, which requires great skill to make, the dough consisting of flour, salt and water is kneaded and made into a meringue. Afterwards, the dough is expanded by hand-tossed and made as thin as paper. It is filled with cheese or minced meat upon request and placed in the oven. If desired, powdered sugar can be sprinkled on top. Serpme Böreği has a very different taste than the pastries you have eaten before and does not tire the stomach at all. You can taste it in many pastry shops in Antalya.
