Kokoşka

Kokoşka is one of the lesser-known flavors of Antalya. It is a local dish with a long history. Although it is not possible to come across Kokoşka, which is prepared with chicken and phyllo bread, it is usually made by the local people in villages and towns on special occasions such as weddings, holidays and ceremonies.

 A whole chicken is boiled, and the meat separated from the bones and skin of the chicken is lintated to the size of an almond to cook Kokoshka. Two phyllo dough spread with butter is laid out on the greased tray. The remaining four phyllo sheets are cut into pieces and placed on top of the other phyllo sheets in the tray. The boiling water of the chicken is poured over the phyllo with the help of a ladle. Crushed walnuts and chicken meat are spread on the phyllo dough. Before the meal is served, hot butter with red pepper powder is poured.
