Hamali

Hamali is a light and delicious dessert that does not tire the stomach, one of Antalya's most original recipes.

Milk and wheat starch, and sugar are boiled to obtain a thick jelly for the Hamali. The jelly is poured into a flat container and cooled. Baklava phyllo dough is approximately three fingers wide and 40 cm. They are divided into long strips and oiled on them. The cooled jelly is cut into cubes. Two or three cubes of jelly are on the underside of the phyllo strip, which is placed on a flat surface. The dough folded in a triangle shape is wrapped in amulets. Melted butter is spread on the phyllo dough on the tray. The dough is baked in the oven until the tops are golden brown. The phyllo should be taken out of the oven for the jelly not to melt as soon as they are browned. Hamali is prepared from water, sugar and lemon juice and poured with cooled syrup. It is served with a sprinkle of cinnamon.
