Alafaşı

Alafaşı is a dish made from natural herbs unique to the region. It is one of the most popular flavors of Antalya Cuisine. It is prepared with wild herbs such as purslane, nettle, hibiscus and tangerine. This dish is frequently preferred on the tables because it is light and healthy.
 
Mixed herbs for Alafasi are washed and roughly chopped. Fresh or dry onions are chopped and sautéed, and cooked together with grated tomatoes until the juice of the tomatoes has evaporated. Herbs, diced zucchini and spices are added to the pot and left to cook. When the food releases its water, rice or bulgur is added and cooked until the grains swell. The dish is eaten warm. It is usually served with yogurt on the side. Alafaşı, which you can taste in restaurants that serve local dishes, can also be prepared by adding ground beef if desired.
